O.M.G. It’s so hot in my part of Tennessee that you start sweating within seconds of stepping outside. It’s so MISERABLE that you (and by you, I mean some crazy person named Whitney G) must crank up the car and get the A/C running for at least five minutes before daring to drive anywhere. Oh, and don’t you dare think of venturing into town without chilled water bottles and a sweat towel.
Anyway, the week before last was WEIRD, but in a good way. (I’ll update you on this past week’s DISASTER-fest tomorrow)
I started the week by trying out a grapefruit mimosa at a new-to-me brunch place, and it was so good I ordered another. But this ended up being a TERRIBLE decision because I’m a super lightweight and ended up with a headache. <3
I’d been meaning to make black bean “keto-tillas” for a while, so I finally tried, and y’all…THEY. WERE. EDIBLEEEEE!
It’s so simple (Tortilla, beans–which I cooked first and flavored with other veggies and seasoning, cheese, and jalapeños), BUT for a kitchen-challenged person like me, this was an AMAZING feat!
Baby G accompanied me to a few plant nurseries and a Farmer’s Market, but we couldn’t spend too much time at these places because the HUMIDITY is absolutely BRUTAL past nine o’clock in the morning.
I “started” another book and finished it in record time because it hits close to home, so… We’ll get to discussing that one via my newsletter pretty soon. I may have to push back I Wish I Would’ve Warned You by a few weeks*, but we’ll see. 🙂 (I did push this back, but it’s still coming!)
